Zachfit 2008 and Beyond

Paleo Slow-Chili
I’m beginning to love my slow cooker more and more.
  • 2 pounds of organic beef from Trader Joe’s
  • 3 peppers yellow, orange and red (diced)
  • 1 large sweet onion (diced)
  • 2 tablespoons of minced garlic
  • 1 can of tomato paste
  • 1 large can of diced tomatoes in juice
  • 1 cup of beef stock
  • lots of cumin, cayenne, papika, chili powder, salt, pepper

I browned the meat in garlic and spice until fully cooked. Then sautéed the vegetables with spice and garlic. Then I put it all into the slow cooker and added the beef broth and more spice. The key step here that ultimately led to the explosion of favor, was to include all of the beef drippings if you will, from the browning process (which I can’t take credit for). I cooked it on high for about 5 hours. Then I ate some of it.
